Waldorf Salad Recipe Which Can Combat The Dehydration That Can Cause Migraines

Traditional and simple can be best when considering a large-portion salad on a warm summer day. Waldorf salad is a culinary institution created by the maître d’hôtel of New York’s Waldorf Astoria Hotel in 1896. You can find variations of the salad in every city in North America and many countries abroad. This fresher version does not contain walnuts or mayonnaise because they can be migraine triggers, but the chicken breast adds substance and flavor.

  • 2 Granny Smith apples, cored and chopped
  • 1 teaspoon white vinegar
  • 6 celery stalks, chopped
  • 2 cups halved green grapes
  • 1 pound cooked boneless, skinless chicken breast, chopped
  • 3 cups shredded kale

1.In a large bowl, mix the apples and vinegar until the apple chunks are well coated.
2.Stir in the celery, grapes, chicken, and kale.
3.Toss the salad to mix the ingredients, and serve.

How It Helps: Celery contains abundant quantities of a flavonoid called luteolin, which can decrease inflammation in the brain. Celery is also very high in water, which can combat the dehydration that can cause migraines.
