Ginger is a centuries-old medicinal ingredient used for digestive issues and detoxing the body. Ginger is an excellent source of vitamins B6 and C, magnesium, potassium, manganese, and copper. This rhizome adds a pleasing heat to any dish, so if you like spicy food, increase the amount of grated ginger. Look for firm, unblemished ginger roots with no wizened areas or moldy spots for the best quality.



  • 1 pound cooked boneless, skinless chicken breast, chopped
  • 1 cup shredded fennel
  • 1 cup shredded English cucumber, liquid squeezed out
  • ½ cup shredded carrot
  • ½ cup shredded jicama
  • 1 scallion, chopped
  • 1 teaspoon chopped fresh cilantro
  • ½ teaspoon grated fresh ginger
  • Pinch sea salt
  • 8 Boston lettuce leaves

1.In a large bowl, toss together the chicken, fennel, cucumber, carrot, jicama, scallion, cilantro, ginger, and salt until well combined.

2.Divide the chicken salad evenly among the lettuce leaves.

3.Wrap the leaves around the filling by folding over two opposite sides and then rolling the leaves into cylinders.

4.Serve.
