Sausage looks like a difficult product to make, but it is just ground-up meat, spices, and other ingredients such as vegetables or dried fruit. This simple sausage has an assertive herb flavor and very little fat, so it freezes beautifully if you want to make a double batch. Try ground chicken, pork, or a combination of different meats for a different taste. You might love creating interesting sausage combinations so much, that you buy a sausage maker with a simple grinder and casings to make the finished product more traditional looking.
