Sunny Carrot Smoothie

This smoothie is absolutely packed
with beta-carotene from the bright carrots and ripe mango. Mangos have an
interesting, almost pine-like taste, which combines beautifully with the thyme
in this pretty breakfast drink. Mangos are an excellent source of vitamins A,
B6, and C, as well as fiber and potassium. When
choosing your mangos, look beyond the color, and pick fruit that gives when you
press it gently and has a delicate scent near the stem end. To blanch
vegetables, simply cook them in boiling water before plunging them in ice
water.
Recipe:
- 2 large carrots, peeled, cut into chunks, and blanched for 5 minutes
- 1 Granny Smith apple, cored and cut into chunks
- 1 mango, peeled, pitted, and cut into chunks
- ½ English cucumber, cut into chunks
- ½ teaspoon chopped fresh thyme
- 4 ice cubes
1. In a blender, blend the
carrots, apple, mango, cucumber, and thyme until
smooth.
2. Add the ice cubes, and blend
until thick and smooth.
3. Pour the mixture into 2
glasses, and serve.
